  • We ordered two coffee kits for a double batch and to fill a 6gal carboy. According to the directions we do not add the flavor until the day we bottle on day 42, however by not adding after racking off sediment there is a lot of extra air space in the carboy during the clarifying/stabilizing process until day 42. Don’t want to top up with another like wine as then there would be no room to add the flavor packets. Please advise.

    • Thank you for your inquiry. In regards to toping up your wine to limit the air space in the carboy, although it could seem like a great head space in the carboy, the wine will be safe. Our procedure for making wine doesn’t include top up even for our table wine so there is always an air space between the wine and the top of the carboy. The recommendation I could give you is to use a solid rubber bung to seal your carboy until day 42. Please, don’t hesitate to contact us if you have further questions.
